Enjoy this warm dessert
Equipment
- 8” cheesecake pan
- Air fryer
Ingredients
The Pan Base
- 2 Tbsp butter
The Batter
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- ¾ tsp baking powder
- pinch of salt (about 0.5g)
- ⅓ cup milk
The Banana Filling
- 2 medium ripe bananas, sliced ½-inch thick
- 1 ½ tbsp packed brown sugar
- ½ tsp ground cinnamon
- ½ tsp vanilla extract
- Optional: 1 tsp lemon juice
Chewy Oat Streusel Topping
- ¼ cup (22 g) rolled oats
- 1 Tbsp all-purpose flour
- 1 Tbsp packed brown sugar
- 1 Tbsp butter, melted
- ¼ tsp ground cinnamon
Instructions
-
In a bowl, toss the sliced bananas with the brown sugar, cinnamon, vanilla, and lemon juice until evenly coated
-
In a small bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk and mix with a fork just until combined into a smooth batter (do not overmix).
-
Pour the 2 tbsp melted butter directly into the bottom of your prepped 6-inch pan. Pour the batter right over the butter. Do not stir.
-
Gently spoon the banana mixture and any sweet juices directly on top of the batter. As it cooks, the batter will rise up and wrap around the bananas. Add optional streusel topping
-
Air Fry at 320°F (165°C), for ~25-28 minutes.
-
Let cool for 10 minutes
Notes
-
Check at 16–18 minutes: If the top is getting deep brown but the center still seems undercooked, loosely tent a piece of foil over the pan for the remaining time.
-
The cobbler is done when a toothpick inserted into the cake portion comes out clean and the top is golden-brown.
